So, I’ve been rather busy lately hence the SEVERE lack of posts! Not only was it my birthday but we moved flat as well, such a nightmare! I’ve been absolutely wiped the past few weeks but I managed to finish BBG 1! Tomorrow I start BBG 2, so happy and rather nervous as well! Will do a progress post at some point over the next week.
We’ve been eating this and that but nothing really spectacular as we’ve been unpacking boxes and trying to create some order in the house, so tonight was the first time I really had a chance to make something nice! My friend Will, posted this recipe for the meatballs, and then my boyfriend and I created the sauce to go with it. Will definitely be having it again but will probably slice the peppers more finely and create small meatballs. The below is enough for 4 people and I’ve saved a couple of the meatballs to have for lunch tomorrow.
Ingredients – serves 4
For the meatballs
- 1 Bell Pepper
- 1 1/2 tbsp Tomato Puree
- 1 1/2 tbsp honey
- 1 1/2 tbsp soya sauce
- 4-6 spring onions
- Bunch of coriander
- 400g Beef Mince
For the meatball sauce
- Spaghetti – 50g per person
- 800g chopped tomatoes
- Bunch of Fresh Basil
- 2 tbsp Balsamic Vinegar
- 1 Medium Onion
- 2 Cloves of Garlic
- 1/2 tsp Chilli Flakes
Method – 30-45 mins
For the meatballs
- Pre-heat the oven to 180°C. Finely chop the pepper and the spring onion. Roughly chop the coriander.
- Mix the tomato puree, soya sauce and honey into a small bowl until it becomes a nice paste. Then pop all the ingredients into a mixing bowl and mix together with your hands.
- Roll the mixture into smallish balls. Then pop into the oven for between 15-20 mins, make sure to keep checking on them to make sure you don’t overcook them.
For the meatball sauce
- Boil a pot of water and put the spaghetti in for about 10 mins until cooked.
- Heat a tbsp of olive oil in a saucepan over medium heat. Chop the onion up finely and put into the saucepan.
- Chop the garlic up finely and then put the garlic and chilli flakes into the saucepan followed by the whole basil leaves.
- Stir the mixture until the basil becomes soft then add the chopped tomatoes and balsamic vinegar and bring the mixture to the boil.
- Once everything is ready present it in a bowl or a plate and voila!
