So a few months ago, my partner ventured to make some breakfast for us. There was nothing but eggs and bananas in the fridge and he proceeded to create some really yummy pancakes. I had seen on pinterest and instagram a lot of protein pancakes and decided to venture into the protein pancake life! I have been perfecting them for a while and I think I have got them down now.
Ingredients – makes about 4 pancakes
For the pancakes:
- 1 egg
- Scoop of protein powder
- 1 tsp of baking powder
- 1 banana
- Dash of almond milk
For the toppings:
- 1 banana
- Pomegranate seeds
- Crème fraîche
Method – takes about 15 mins
- Mush the banana up until relatively smooth in a bowl.
- Add the egg, protein powder, almond milk and baking powder and whisk together until smooth. Add more almond milk if it is still too thick.
- Heat a non-stick frying pan over a medium-low heat. I use a ¼ cup to measure out the pancake size. Flip the pancake when the under side starts going brown.
- I keep the pancakes I have already cooked warm in the oven.
- Put on plates and serve with your toppings. Enjoy!
