Rainbow Popsicles

During the lovely summer we had I really wanted ice lollies. I love them! But so many of them have so much sugar in them it’s worrying. So I searched for a yummy recipe that was healthy and came across quite a few. So I combined aspects of each of them and that is how I made these. Yummy and healthy! Feel free to change layers for different fruits if you wish.img_1930

Ingredients

  • ⅓ cup blueberries
  • ⅓ cup kiwi
  • ⅓ pineapple
  • ⅓ strawberries
  • 125ml coconut water

Method

  1. Whizz the blueberries with 1½ tbsps of coconut water in a blender to form a smooth puree. Fill the ice lolly moulds  ¼ of the way up. Pop into the freezer for 15 minutes to set.
  2. Rinse the blender out and then whizz the kiwi with another 1½ tbsps of coconut water to form a puree. Add a layer of kiwi on top of the blueberries and put back into the freezer to set for another 15 minutes.
  3. Repeat this process, rinsing out the blender before you make each puree of fruit and coconut water and letting each layer set for 15 mins in the freezer before adding the next one until al the different fruit purees are used up. Make sure you layer them in the right order to get the rainbow effect. Once all the layers are done put the ice lolly tops on and freeze them for an hour in order to full set before enjoying,
