This is a good easy lunch recipe. Super quick to just put together in the morning. I prepared the shredded chicken at the beginning of the week so packed it into airtight containers in the fridge
Ingredients – makes 1
- Wholewheat tortilla wrap
- 2 tbsp guacamole (I bought mine from the shop but also easy to make)
- ½ chicken breast
- 30g cheddar cheese
- ½ red pepper
Method – takes about 5 mins (not including chicken cooking time)
- So I poach my chicken in a litre of chicken stock for about 15 mins then drain and allow the chicken to cool before using forks to shred them.
- Take the tortilla wrap and spread the guacamole down the middle.
- Lay the shredded chicken breast and the sliced red pepper on top.
- Sprinkle with 30g grated cheddar and roll up tightly.
- Roll tightly in cling film ready for your lunch bag!
