Chicken Guacamole Wrap

This is a good easy lunch recipe. Super quick to just put together in the morning. I prepared the shredded chicken at the beginning of the week so packed it into airtight containers in the fridge

Ingredients – makes 1

  • Wholewheat tortilla wrap
  • 2 tbsp guacamole (I bought mine from the shop but also easy to make)
  • ½ chicken breast
  • 30g cheddar cheese
  • ½ red pepper

Method – takes about 5 mins (not including chicken cooking time)

  1. So I poach my chicken in a litre of chicken stock for about 15 mins then drain and allow the chicken to cool before using forks to shred them.
  2. Take the tortilla wrap and spread the guacamole down the middle.
  3. Lay the shredded chicken breast and the sliced red pepper on top.
  4. Sprinkle with 30g grated cheddar and roll up tightly.
  5. Roll tightly in cling film ready for your lunch bag!img_2093
