Chicken and Leek Pasta

This is a meal my wonderful boyfriend created. He is rather good in the kitchen and can kind of put things together knowing it will taste nice, a quality I would rather like to have! This meal is extremely easy to eat and comes in at under 500 calories making it light, easy and yummy!

Ingredients – serves 1

  • 1 leek
  • 100g créme fraîche
  • 1 chicken breast
  • 100g fresh pasta
  • Olive oil
  • Little bit of parmesan cheese

Method – takes about 15 mins

  1. Take off the outer layers of the leek and then slice into 5mm rings.
  2. Dice the chicken breast into small pieces.
  3. In a saucepan boil some water for the pasta. In another saucepan pour a tablespoon of olive oil and some salt and pepper over medium heat. Fry the chicken turn frequently until all pieces turn white. Then add the leeks.
  4. Place fresh pasta into the boiling water and set the timer for 4 minutes. Continue stirring the chicken and leeks until the leeks have broken down.
  5. Once the timer is down to 1 minute turn the heat down low on the chicken and leeks. Add the créme fraîche to the chicken and leeks and stir throughly.
  6. Once the pasta is done, drain throughly and add to the chicken and leeks and mix thoroughly. Serve in a small bowl and grate some parmesan cheese and crack a little black pepper over the top.
