Mustard, Avocado, Dill on Whole-Wheat Muffin with Boiled Egg

Totally winning at the breakfast game at the moment!! Love finding and adapting new recipes and discovering different flavours. My love affair with food is strong! This is another quick, easy and delicious recipe. I don’t have a lot of time in the mornings so these types of recipes really help when I am trying to fit in a good nutritious homemade meal before work.

Ingredients – serves 1

  • 1 whole-wheat English muffin
  • 1 tsp whole-grain mustard
  • ½ avocado
  • fresh dill
  • 1 boiled egg

Method – takes about 5 mins

  1. Boil the egg for about 4-5 mins.
  2. Split the muffin and toast it to your liking.
  3. Roughly chop the dill, and slice the avocado.
  4. Top the toasted English muffin with the mustard, avocado and dill. Serve with the boiled egg and enjoy!IMG_1886
