So this week I decided to try a different overnight oats recipe every day. I love overnight oats, so quick and easy, yummy to taste and pretty to create for instagram pictures! All of these recipes serve 1.
Peanut Butter Cup Overnight Oats
This was a good recipe if your craving chocolate and peanut butter is always a plus! However, I found I needed some raspberries to make it slightly sweeter.
Ingredients
- 2½ tbsp smooth peanut butter
- ½ tsp vanilla extract
- ¼ cup low-fat yoghurt
- ⅓ cup unsweetened almond milk
- ½ cup rolled oats
- ½ tbsp cacao powder
- Optional: dark chocolate chips or raspberries
Method
- In a small bowl, combine the peanut butter, vanilla extract and a pinch of salt. Microwave for 10 seconds, stir then microwave for another 10 seconds.
- Add in the yoghurt, milk, oats and cacao powder.
- Stir well and make sure the peanut butter is thoroughly mixed.
- If desire add the chocolate chips.
- Transfer to a small jar, seal and store in the fridge overnight.
- I decorated mine with raspberries instead of dark chocolate chips.
Peanut Butter and Jam Overnight Oats
These are the perfect way to start your morning. Totally packed with fibre and protein and really very tasty!
Ingredients
For the pb oats:
- 1 cup oats
- 1 cup almond milk
- 1 tbsp chia seeds
- 2 tbsp vanilla protein
- 2 tbsp smooth peanut butter
For the jelly layer:
- 2 tbsp all natural strawberry preserve
- 4 large strawberries
Method
- For the oats: mix all the ingredients together and place in refrigerator overnight.
- For the jelly: Dice up to large strawberries. Mix the preserve with the strawberries
- Layer the jam then the oats and top with the other 2 strawberries.
Apple Pie Overnight Oats
This next recipe doesn’t look amazing but don’t let that deter you, these oats are lovely and the topping just tastes delicious. The apple sauce is both sweet and spicy and it is just divine. I made mien the night before then warmed everything in the microwave in the morning before eating.
Ingredients
For the oats:
- 1 cup rolled oats
- ¾ ground cinnamon
- ⅛ ground nutmeg
- 2 tbsp sugar
- ⅓ cup apple sauce
- ½ cup almond milk
For the filling:
- 1 apple, cored and chopped into ½ inch chunks
- ½ tbsp cornflour
- ¼ tsp grond cinnamon
- Pinch of nutmeg
- Pinch of salt
- 1 tbsp sugar
- 60ml water
Method
- To make the oats: place oats, cinnamon, nutmeg and sugar into a medium sized bowl and stir briefly to combine.
- Add in the apple sauce and milk and mix until well combined. Cover the bowl and place in the fridge overnight.
- Make the filling: Placed chopped up apples, cornflour, cinnamon, nutmeg, salt, sugar and water into a small saucepan and place over a medium heat.
- Bring to a boil. Once boiling, turn the heat down to low and cook for 5-7 mins until the apples are tender.
- If you make the apple sauce the night before, you may need to add 1 tbsp of water before you warm the filling up in the morning.
- To serve: place the oats into a bowl first then top with the apple pie filling. It is fine to serve warm or cold although I prefer warm in the microwave for 1-2 mins.
Brownie Batter Overnight Oats
This wasn’t my favourite of all the recipes I have to say, for me it was a bit too chocolatey, although the greek yoghurt helped with that, I just put more on than is indicated in this recipe.
Ingredients
- ½ rolled oats
- 1½ tbsp cacao powder
- ½ tbsp chia seeds
- ¼ cup greek yoghurt
- ½ cup almond milk
- 1 tbsp maple syrup
- ½ tsp vanilla extract
Method
- Mix the oats, cacao powder, chia seeds and a pinch of salt together.
- Add the greek yoghurt, milk, maple syrup and vanilla extract and mix again. Place in the refrigerator overnight.
- In the morning top the mixture with greek yoghurt and fresh strawberries.
Raspberry Jam Overnight Oats
So this was definitely my favourite recipe,the oats are wonderful but it is the jam that makes this. I love raspberry so I am hooked. It is very sweet so if your looking to satisfy your sweet tooth this is the way to do it!
Ingredients
For the raspberry chia jam:
- ½ cup fresh raspberries
- ½ tbsp raw honey
- ½ tbsp fresh squeezed lemon juice
- 1 tbsp chia seeds
For the overnight oats:
- 1 cup rolled oats
- 1 cup unsweetened almond milk
- 1 tbsp chia seeds
- ½ tbsp vanilla extract
- 1 tbsp raw honey (optional – only if you want the oats sweeter)
Method
- For the jam: Place the raspberries, honey and lemon juice in a bowl. Using a fork, mash the raspberries until they begin to break down and resemble thick jam. Stir in the chia seeds, cover with a lid and set in the refrigerator overnight.
- For the oats: In a large bowl combine all oats ingredients until thoroughly mixed. Cover and store in the refrigerator overnight.
- To serve: Layer overnight oats with the raspberry chia jam. Feel free to garnish with fresh raspberries. I always eat my oats cold but you can warm it up if you wish. Enjoy!
